I tried my first batch understanding the the permissible limit is 83ppm of "quinine" in tonic water for consumption. I ignored the fact that the quinine sulfate dihydrate also contains one SO4 ion and two H2O molecules per Quinine molecule, so I had far less than 83PPM in my first sample liter. I put 2 limes, 83g of the chemical, sweetener of choice into 1 liter of sparkling spring water. It tasted good but not nearly as tangy/bitter as commercial tonic water. I will definitely be upping the quinine next time to adjust for the weight of the Sulfate Ion and water molecules. I plan to call Merrill & Ring at least once a day, and gather more info in the meantime about the chemicals and the spraying operation itself. It's a good idea to safeguard ourselves as you said, letting them know we will hold them responsible for damage. On the other hand, if it gets to that point, the damage will have been done, do us, our garden, our forest and our animals, which seems unacceptable to me. When Pope and Talbot sprayed the timber land behind us, with a helicopter flying over Snow Creek and dripping solution, the only warning I had was when it showed up. Unfortunately, my new video camera was not trialed and although I could see the spray not shutting off before the pilot turned around over the creek, I could not get it recorded. We called everyone from DNR to Fisheries and we had return phone calls that same day, plus someone out here the next day from Fisheries, I think. When the timber company called, he told me what they were spraying, and all were chemicals we would never use so close to our commercial row crop, especially with the possibility of molecule drift because it was very warm outside. Go on record now with the timber company, fisheries, DNR and your attorney, that if any damage is discovered over the next month, you will file charges. Don't forget your own health, most herbicides have distinct marker odors, as well. When you can smell them, you are breathing them in. Have your video camera ready for when you hear anything. Remember to have a reference point in the shot. Wheat is a much stronger fermenter than most other grains, and I found my GF starter needed nearly 2 weeks to show adequate signs of yeasty life. I think next time I'll try making a starter with one of Manini's other mixes (a plainer one); it could be that the proportion of whole grains also had an effect on the fermentation.<br /><br />Re: "dietary preferences," I do realize that being gluten free is not simply a preference for most people, and I know people myself with Celiac disease. I was simply speaking generally about our efforts to take others' needs into consideration, as food is a big part of hospitality for us. <br /><br />I'm a pretty serious bread baker, and I'm enjoying taking on the challenge of gluten-free bread. I figure it will take significant infrastructure as we are at 4800 feet and it gets pretty cold here, sometimes with lots of snow, and we can't use any electric heating (we don't even have a generator). Also lots of predators, like you, we have cougars and goshawks which sometimes nest right here. Fun to watch, and sometimes they hang around and watch me work.
